My recipe for lime and coriander fajitas - yummy

Lime and Coriander Fajitas recipe
Serves 4

Fajitas are a Tex-Mex classic, great for families because each member of the family can fill the tortillas to suit themselves.

Ingredients:

For the marinade
1/2 cup veg oil
1/2 cup lime juice
Zest of the limes
large handful of coriander, including the stalks
2-3 garlic cloves
Dash chilli sauce (to suit your taste and dependent on the sauce used)
tsp salt

3-4 Chicken breasts
250g Mushrooms, quartered
3 onions red, white or both, thinly sliced
1 red pepper, sliced into strips
1 bunch spring onions sliced
handful coriander
2 limes split into wedges



For the Marinade:

Simply place all the ingredients in a food processor and blend until smooth.
Cut up the chicken into strips and the mushrooms into quarters and pour over the marinade.
Marinade for 3-5 hours.


 To make the Fajitas:

Add a little oil to a large frying pan or wok and fry the onions until brown and crispy.
Add the marinated chicken and mushrooms and fry until all the moisture has gone and the chicken and mushrooms starts to char.  This can take 1/2 hour.  If you want to speed up the process split it into 2 pans.


 When the chicken and mushrooms has a good colour add the peppers and spring onions.

Fry for 2-3 mins











Finally add the coriander and serve with lime wedges.

Wrap in a tortilla.

Serve this with accompaniments of your choice.  Our favourites are grated cheese, soured cream, guacamole, salsa, lettuce, chopped onion, refried beans, jalapeno chillies.




Why not try with just mushroom for a vegetarian option or beef instead of chicken.  Add a chilli to the marinade if you like yours spicy.
