Pad Thai Noodle recipe

Pad Thai Noodles

A friend asked me for a simple noodle recipe, so here's my version of Pad Thai.  
It's not strictly authentic but I like it.

 You will need:

1 tbsp vegetable oil
2 beaten eggs
1 cup of king prawns, chicken or pork (or none if you want it vegetarian)
Pad Thai sauce, either by it ready made and follow the amounts on the jar or make it yourself (recipe further down)
2 big handfuls of beansprouts or sometimes I buy the supermarket cheap stir fry
2 packets of straight to wok Pad Thai Noodles or buy the dry ones and soak them as per the instructions
4 spring onions cut on the angle
2 tbsp dry roasted peanuts, roughly chopped
2 tbsp chopped coriander
2 tbsp sugar
2 tbsp fish sauce
Juice of one lime
Lime wedges to serve

Method:

Heat the oil in a wok or large frying pan, add the beaten egg and let it harden, cut it up with your spoon.
Add the Pad Thai sauce and the prawns, chicken or pork (or a mixture of all 3 if you like). Cook the meat through then add the beansprouts/stir fry, noodles and stir until the bean sprouts are cooked and the noodles warmed through.
Finally add the remaining ingredients.  Taste the Pad Thai you may want to add a bit more fish sauce.
Then serve with the lime wedges.
