Cottage Pie with Cauliflower Cheese Layer


You will need:

2 chopped onions
Minced beef 500g
1 dsp flour
1 tin mixed vegetables
1 beef stock cube
2 tbsp horseradish
2 tbsp gravy granules
1 kg potatoes
10g butter
250g frozen cauliflower florets
10g butter
2 dsp cornflour
150ml milk
100g cheese
1 tsp mustard
salt

Method:

Fry the onions in a little oil until soft, then add the mince and fry until brown.

Add the flour and stir for one minute, then add the drained tin of vegetables, the stock cube and horseradish and stir for another few minutes.  Then add the gravy granules and add enough boiling water so that it is a thick consistency. Season with salt and pepper.

Simmer for 15 mins, topping up with water if needed, but you want it quite thick, otherwise your mash will sink!

Talking of mash, peel and boil the potatoes, drain and mash with the butter.  Season with salt.

Make the cauliflower cheese.  Cook the cauliflower as per the packet and leave to drain.  The cauliflower needs to be dry otherwise you end up with soggy cottage pie!  Melt the butter in a saucepan, mix in the cornflower with a wooden spoon until you get a smooth paste then slowly add the milk, then simmer (do not let it boil), stirring constantly.  When thick, add the mustard and cheese and stir until the cheese has melted.  Season with salt.

Now assemble the dish.  Place the mince on the bottom, then the mash and then the cauliflower cheese.

Oven cook for 20-30 mins until the top is brown.
