5 at 5pm for £5 - Fish Pie

Fish pie

You will need:

Fish Pie Mix 300-350g
(Most supermarkets sell this on their fresh and prepacked fish counter and some even have it in their frozen section.  It's usually a mixture of haddock, smoked haddock and salmon.)
300ml milk
Bay Leaf
3 eggs
20g butter
1 tbsp plain flour
parsley
150 ml Double Cream
1 kg potatoes
100g frozen peas

(store cupboard ingredients)

Method:

Poach the fish pie mix in the milk, with a bay leaf, salt and white pepper, for 10 minutes.

Hard boil the eggs for 10 minutes.

Peal and boil the potatoes until soft.  Then drain and mash.  Add a little of the cream, 10g butter and season to taste.

Set the eggs and fish aside to cool down.  Meanwhile place the butter in dish and soften in a microwave for 10 secs and blend with the plain flour.  Add the butter and flour to the milk and simmer for 5 mins, stirring constantly.  When thickened add the double cream and dried parsley.

Flake the fish and remove the skin. Peal and roughly chop the eggs.  Then place the fish and eggs all in an ovenproof dish and add the frozen peas.  Pour over the creamy sauce and top with the mashed potato.  Bake in the oven for 30 mins.

Although this comes to £7.44, you don't actually use all of the ingredients, and if you can buy them loose from a farm shop or greengrocers, you can still get all the ingredients for under £5.00

1kg peas, you only need 100g = 10p
You only need 1/2 the cream = 43p
2.5kg potatoes, you only need 1kg = 0.76p
you only need 3 eggs = 50p

£7.44-£2.95=£4.49

Which gives you 51p which should cover the milk.
