Loaded Potato Skins

A great way of using up leftover jacket potatoes

You will need:

Jacket Potaotes
Soft Cheese
Fried/Grilled Crispy Streaky Bacon
Grated Cheese

Method:

There are no measurements as this recipe is to your taste and what you have in the fridge.

Firstly scoop out the potato from the skins and place in a bowl.  Mix the potato with the soft cheese and add a little salt, not too much as the bacon is salty.  Add the crispy bacon pieces and mix thoroughly.

Place the mixture back in the skins and top with grated cheese.

Bake in the oven for 15-20 mins until the cheese is golden brown and the potato mixture is hot all the way through.

Serve with soured cream or barbecue sauce.
