American Muffins


A fun and easy recipe to bake with the kids in the holidays.  The recipe is very rich but well worth an indulgent treat every now and again.

I have made it many times with different additions.  Favourites are strawberries, blueberries, mini creme eggs, chocolate buttons.

Today we used, Bitsa Wispa, Caramel Nibbles, bananas and glace cherries.

If you mix the banana and caramel nibbles you get a really nice banoffee muffin.

You will need:

250g Plain Flour
250g Butter
190g Caster Sugar
5 Eggs
20 g Baking Powder
Chocolate or fruit

Makes 16

Method:

1. Cream the butter and sugar until white and fluffy


2. Add the eggs and mix for a further 5 mins
3. Add the flour and baking powder and mix until all the ingredients are combined.

4. Add the chocolate or fruit pieces




5. Bake in the oven for 12 minutes at 200 C
6. Leave to cool and then eat!
