Salmon with maple syrup and balsamic vinegar glaze

Reduce 1/2 cup of balsamic vinegar, 1/4 cup maple syrup, 3 tbps cider vinegar with a pinch of salt. 

Fry the salmon and add the glaze for the last 10 mins, basting with the glaze. 

Serve with watercress, crème fraîche and a spoonful of the glaze.
