Chicken in Panko breadcrumbs

A lovely low-fat version of chicken dippers.



You can also use this method to coat whole chicken breast or even better, stuffed chicken breasts.

you need:

Lighter than light mayo (73 cals/100ml)
salt
black pepper
smoked paprika
oregano  garlic powder
panko breadcrumbs

Simply mix enough mayo to coat the chicken, with the salt, pepper, paprika and garlic powder.



Dip the chicken in the mayo then coat in the breadcrumbs.


Spray a baking tray with fry light spray and put the chicken on the tray.  


Cook in a moderate oven until cooked, turning halfway.

Serve with salad or sweet potato chips.
