Chicken Gyros with garlic and herb dressing



For the gyros

  • 1kg chicken thighs
  • 125g 0% Fat Greek Yoghurt
  • zest and juice of half a lemon
  • tsp paprika
  • tbsp oregano
  • fresh thyme leaves - 2-3 stalks
  • garlic clove grated 
  • tsp sea salt 
  • tsp liquid smoke (optional)
  1. Prepare the marinade by combining all the ingredients apart from the chicken
  2. Cut the chicken into bite size cubes and add to the marinade
  3. Marinade, ideally overnight, but at least for a couple of hours
  4. Cook on a griddle or in an airfryer until the chicken in cooked all the way through
  5. Serve with salad and flatbread of your choice

For the garlic and herb dressing
  • 200g of 0% Fat Greek Yoghurt
  • garlic clove grated
  • juice of half a lemon
  • 1/4 tsp sea salt
  • 12 tsp of granulated sweetener 
  • finely chopped herbs, I used parsley, dill & chive
  1. mix all the ingredients together and let down with a little water until it is the consistency you like!
